Staphylococcus aureus (; หมายถึง องุ่นสีทอง) เป็นแบคทีเรียชนิด facultative anaerobic กรัมบวก รูปกลม เป็นส่วนหนึ่งของจุลินทรีย์ที่เป็นเชื้อประจำถิ่นในผิวหนังและโพรงจมูก เป็นแบคทีเรียก่อโรคชนิดหนึ่ง เมื่อ S. aureus ปนเปื้อนลงไปในอาหาร จะสร้างสารพิษที่เรียกว่าเอนเทอโรทอกซินขึ้น ซึ่งแบ่งออกเป็น 8 ชนิด ได้แก่ ชนิด A, B, C1, C2, C3, D, E และ H สารพิษนี้ทนต่อความร้อนได้ดีมาก ทำให้ผู้บริโภคเกิดอาหารเป็นพิษ หลังจากรับประทานอาหารที่มีแบคทีเรียปนเปื้อนเข้าไปประมาณ 1-6 ชั่วโมง อาการของโรคอาหารเป็นพิษที่เกิดจาก S. aureus คือ คลื่นไส้ อาเจียน ท้องร่วง ปวดท้องจากสารพิษ อาการมักเกิดขึ้นอย่างเฉียบพลัน ส่วนมากไม่มีไข้ ในรายรุนแรงอาจช็อกได้
