ปลาแมกเคอเรล

ปลาแมกเคอเรล (อังกฤษ: mackerel  ฟังการออกเสียง (วิธีใช้·ข้อมูล) ) เป็นชื่อสามัญของปลาทะเลหลายสปีชีส์โดยมากจากวงศ์ปลาอินทรี (Scombridae) แต่ปลาคล้ายปลาแมกเคอเรลในวงศ์ปลาหางแข็ง, วงศ์ Hexagrammidae และวงศ์ Gempylidae ก็เรียกว่าปลาแมกเคอเรลด้วย เป็นปลาพบทั้งในทะเลเขตอบอุ่นและเขตร้อน ทั้งตามชายฝั่งและนอกชายฝั่งในมหาสมุทร ปลาแมกเคอเรลสปีชีส์ต่าง ๆ ปกติจะมีลายแนวตั้งที่หลังและมีหางเป็นง่าม ผิวเป็นเกล็ดละเอียดสีเงินมันวาว ตัวเรียวยาวกลมคล้ายทรงกระบอก หัวแหลมท้ายแหลม มีครีบกระโดงหนึ่งครีบ ครีบท้องหนึ่งครีบ ครีบข้างหนึ่งคู่ หางสองแฉก อาศัยอยู่ทั่วไปตามชายฝั่งทะเล อยู่รวมเป็นฝูงใหญ่ ปลาทูก็อยู่ในวงศ์ Scombridae ดังนั้นจึงจัดเป็นปลาแมกเคอเรลเช่นกัน ส่วนปลาซาร์ดีนอยู่ในวงศ์ Clupeidae ที่มีขนาดเล็กกว่า จึงไม่จัดเป็นปลาแมกเคอเรล

ปลาอาจอยู่แยกเป็นกลุ่มต่าง ๆ แบ่งโดยภูมิประเทศ ปลาบางส่วนอพยพเป็นฝูงใหญ่ไปตามชายฝั่งเพื่อหาที่วางไข่อันเหมาะสมในน้ำค่อนข้างตื้น หลังวางไข่แล้ว ปลาก็จะกลับไปตามทางที่ตนมาโดยเป็นกลุ่มเล็กลงไปยังที่หาอาหาร บ่อยครั้งใกล้ ๆ กับบริเวณน้ำผุดขึ้น (upwelling) จากที่นั้น ปลาอาจจะย้ายไปดยู่นอกฝั่งในน้ำลึกกว่าแล้วใช้เวลาในฤดูหนาวโดยไม่ค่อยทำอะไร ปลาฝูงอื่น ๆ อาจอพยพข้ามมหาสมุทร

ปลาแมกเคอเรลเล็ก ๆ เป็นเหยื่อของปลาล่าเหยื่อที่ใหญ่กว่า รวมทั้งปลาแมกเคอเรลที่ใหญ่กว่าและปลาคอดแอตแลนติก ฝูงนกทะเล วาฬ โลมา ฉลาม และปลาที่ใหญ่กว่าเช่น ปลาทูน่าและปลากระโทง จะตามฝูงปลาแมกเคอเรลไปเพื่อโจมตีพวกมันโดยวิธีที่ซับซ้อนและเป็นการร่วมมือกัน เนื้อปลาแมกเคอเรลมีกรดไขมันโอเมกา-3 สูง ดังนั้น มนุษย์ก็จึงล่ามันมาก สามารถนำมาทำเป็นปลากระป๋อง โดยเก็บเนื้อปลาในซอสมะเขือเทศ ซึ่งเป็นการถนอมอาหารอย่างหนึ่ง ในปี 2009 มีการประมงปลาทางพาณิชย์ถึง 5 ล้านตัน ส่วนคนจับปลาเป็นกีฬาก็ชื่นชอบความช่างสู้ของปลา king mackerel (Scomberomorus cavalla)

สปีชีส์

มีปลากว่า 30 สปีชีส์ โดยหลักอยู่ในวงศ์ปลาอินทรี (Scombridae) ที่ปกติเรียกว่าปลาแมกเคอเรล คำภาษาอังกฤษตั้งแต่ปี 1300 ว่า "mackerel" หมายความว่า "มีเครื่องหมาย" หรือ "ด่างพร้อย" ได้มาจากคำฝรั่งเศสเก่า (Old French) คือ maquerel ซึ่งหมายถึง "แมงดา" หรือ "ผู้จัดหา" (หญิงเพื่อจุดประสงค์ทางเพศ) แม้นี่จะเชื่อมกับลักษณะของปลาได้อย่างไม่ชัดเจนแต่ปลาก็วางไข่อย่างขะมักเขม้นเป็นฝูง ๆ ใกล้ฝั่งและแนวคิดในสมัยกลางเกี่ยวกับการสืบพันธุ์ของสัตว์ก็ค่อนข้างสร้างสรรค์

วงศ์ปลาอินทรี

ปลาจากวงศ์ปลาอินทรี 21 สปีชีส์เรียกอย่างสามัญว่า ปลาแมกเคอเรล สปีชีส์ต้นแบบ (type species) ของปลาแมกเคอเรลวงศ์ปลาอินทรีก็คือปลาแมกเคอเรลแอตแลนติก Scomber scombrus ปลา Atlantic chub mackerel (Scomber colias) และปลาแมกเคอเรลแปซิฟิก (Scomber colias) เคยเชื่อว่าเป็นสปีชีส์ย่อยของสปีชีส์เดียวกัน แต่ในปี 1999 นักวิชาการใช้หลักฐานทางโมเลกุลและทางสัณฐานแยกสปีชีส์เหล่านั้นออกจากกัน ปลาแมกเคอเรลเล็กกว่าและมีวงจรชีวิตสั้นกว่าปลาที่เป็นญาติใกล้ชิดกันคือ ปลาทูน่า ซึ่งก็อยู่ในวงศ์เดียวกัน

ปลาแมกเคอเรลแท้อยู่ในเผ่า Scombrini (ปลาแมกเคอเรลแท้) เป็นเผ่าที่มีปลา 7 สปีชีส์ แต่ละสปีชีส์อยู่ในสกุลหนึ่งหรือสองสกุล คือ Scomber หรือ Rastrelliger (ปลาทู)

Scomberomorini เป็นปลาแมกเคอเรลสแปนิช

ปลาแมกเคอเรลสแปนิช (Spanish mackerel) อยู่ในเผ่า Scomberomorini ซึ่งเป็นเผ่าพี่น้อง (sister tribe) ของปลาแมกเคอเรลแท้ เผ่านี้มีปลา 21 สปีชีส์โดย 18 สปีชีส์อยู่ในสกุล Scomberomorus (ปลาอินทรี) 2 สปีชีส์อยู่ในสกุล Grammatorcynus และสปีชีส์เดียวคือปลาวาฮูอยู่ในสกุลมีชนิดเดียวคือ Acanthocybium

ปลาแมกเคอเรลอื่น ๆ

อนึ่ง ปลาสปีชีส์ต่าง ๆ ที่มีลักษณะคล้ายปลาแมกเคอเรลในวงศ์ปลาหางแข็ง, วงศ์ Hexagrammidae และวงศ์ Gempylidae ปกติก็จะเรียกว่าปลาแมกเคอเรลด้วย มีกระทั่งความสับสนระหว่าง Pacific jack mackerel (Trachurus symmetricus) กับ Chilean jack mackerel (Trachurus murphyi) ที่จับกันมากกว่า เคยเชื่อว่าทั้งสองเป็นสปีชีส์เดียวกัน แต่ปัจจุบันจัดเป็นสปีชีส์ต่างหาก ๆ

คำภาษาอังกฤษว่า "mackerel" ยังใช้เป็นคำวิเศษณ์สำหรับชื่อสามัญของปลาอื่น ๆ บางครั้งเพื่อบ่งว่าปลามีลายแนวตั้งคล้ายกับปลาแมกเคอเรลวงศ์ปลาอินทรี ปลารวมทั้ง

โดยนัยเดียวกัน ชื่อก็ยังใช้ในสัตว์อื่น ๆ เช่น แมวลาย คือ mackerel tabby cat และในวัตถุไม่มีชีวิตอื่น ๆ เช่น รูปเมฆที่ออกลาย ๆ คือ mackerel sky

ลักษณะ

 
เหมือนปลาในวงศ์ปลาอินทรีอื่น ๆ ปลาแมกเคอเรล เช่น ปลาแมกเคอเรลแอตแลนติกว่ายน้ำได้เก่งมาก และสามารถหดครีบเข้าไปในร่องที่ตัวเพื่อทำให้ตัวเพรียวขึ้น มีหางเป็นง่าม ตัวเล็กและบางกว่าปลาทูน่า

ปลาแมกเคอเรลโดยมากอยู่ในวงศ์ปลาอินทรี โดยปลาทูน่าและปลาโบนิโต (bonito, ปลาเผ่า Sardini) ก็รวมอยู่ในวงศ์ด้วย โดยทั่วไปแล้ว ปลาแมกเคอเรลจะเล็กและบางกว่าปลาทูน่า แต่มีลักษณะอื่น ๆ ที่คล้าย ๆ กัน ถ้ามีเกล็ด ก็จะเล็กมาก เหมือนกับปลาทูน่าและโบนิโต ปลาแมกเคอเรลกินจุมาก สามารถว่ายน้ำได้เร็วและคล่องแคล่ว สามารถทำให้ตัวเพรียวโดยหดครีบเข้าไปในร่องตามตัว เหมือนกับปลาอินทรีอื่น ๆ ตัวเป็นรูปทรงกระบอก มีครีบเล็ก ๆ ตามหลังและท้องโดยอยู่หลังครีบหลัง (dorsal fin) และครีบก้น (anal fin) แต่ไม่เหมือนกับปลาทูน่าที่ใหญ่กว่า ครีบเหล่านี้ค่อนข้างบาง สปีชีส์ต้นแบบของแมกเคอเรลวงศ์ปลาอินทรีก็คือปลาแมกเคอเรลแอตแลนติกสปีชีส์ Scomber scombrus ซึ่งมีสีเขียว-น้ำเงินเลื่อมพรายที่หลังและสีเงินที่ท้อง มีลายหยักเกือบเป็นแนวตั้งตลอดตัวบนหลัง

ลายเด่นที่หลังปลาอาจดูเหมือนจะเพื่อพรางตัวไม่ให้แตกต่างกับพื้นหลังรอบ ๆ ปลา แต่จริง ๆ ไม่เป็นเช่นนั้น เพราะปลาอยู่ในเขตต่ำลึกกลาง ๆ (midwater pelagic) ซึ่งไม่ปรากฏพื้นหลัง แต่ปลามีรีเฟล็กซ์ตามมองวัตถุที่กำลังเคลื่อนที่ (optokinetic reflex) เป็นระบบการเห็นที่ไวต่อลายซึ่งกำลังเคลื่อนที่ เพราะถ้าปลาจะอยู่เป็นฝูงได้อย่างมีประสิทธิภาพ ก็จะต้องมีกลไกลช่วยวางตัวให้เข้ากับปลาใกล้ ๆ และให้ว่ายน้ำเร็วเท่ากัน ลายของปลาใกล้ ๆ จึงเป็น "schooling marks" (สัญญาณฝูง) ซึ่งเป็นตัวส่งสัญญาณให้รู้ถึงตำแหน่งโดยเปรียบเทียบ

 
ปลา เช่น Pacific jack mackerel ปกติจะมีลายแนวตั้งที่ด้านข้างซึ่งเป็น "schooling marks" คือตัวช่วยให้อยู่รวมกันเป็นฝูงได้

ลายของปลาแมกเคอเรลบางชนิดมีชั้นเกล็ดบาง ๆ ที่สะท้อนแสง ในปี 1998 นักชีววิทยาบางท่านอ้างว่า เกล็ดบาง ๆ เหล่านี้ให้ข้อมูลเพิ่มแก่ปลาอื่น ๆ ว่าปลากำลังเคลื่อนตัวอย่างไร เพราะเมื่อปลาเปลี่ยนทิศทางเทียบกับปลาอีกตัวหนึ่ง แสงสะท้อนที่ส่งไปยังปลาอีกตัวหนึ่งก็จะเปลี่ยนไปด้วย ความไวทิศทางเช่นนี้ทำให้ปลาได้ "ความได้เปรียบอย่างพอสมควรในการตอบสนองอย่างรวดเร็วเมื่ออยู่เป็นฝูงหรือกินอาหาร"

ปลาแมกเคอเรลเป็นตั้งแต่ปลาเหยื่อขนาดเล็ก (forage fish) จนถึงปลาที่ตกเป็นกีฬาซึ่งใหญ่กว่า (game fish) ปลาตามชายฝั่งมักจะตัวเล็ก king mackerel เป็นตัวอย่างปลาแมกเคอเรลที่ใหญ่กว่า ปลาโดยมากเลือดเย็น แต่ก็มีข้อยกเว้นบ้าง คือปลาบางสปีชีส์มีอุณหภูมิร่างกายที่สูงกว่า ปลากระดูกแข็งเลือดอุ่นล้วนอยู่ในอันดับย่อยปลาทูน่า (Scombroidei) ซึ่งรวม butterfly kingfish (Gasterochisma melampus) อันเป็นปลาแมกเคอเรลรูปแบบดึกดำบรรพ์

ปลาแมกเคอเรลว่ายน้ำเก่ง ปลาแมกเคอเรลแอตแลนติกว่ายน้ำได้เร็ว 0.98 เมตร/วินาที (3.5 กม./ชม.) อย่างต่อเนื่อง (sustained) และเร็ว 5.5 เมตร/วินาที (19.8 กม./ชม.) ในระยะสั้น ๆ (burst) เทียบกับ chub mackerel ที่ว่ายน้ำได้เร็ว 0.92 เมตร/วินาที (3.3 กม./ชม.) อย่างต่อเนื่อง และ 2.25 เมตร/วินาที (8.1 กม./ชม.) ในระยะสั้น ๆ

ปลาแมกเคอเรลโดยมากอยู่ในพื้นที่จำกัด

  • ปลาแมกเคอเรลสแปนิชแอตแลนติก (Scomberomorus maculatus) อยู่ทางฝั่งตะวันออกของอเมริกาเหนือเริ่มตั้งแต่เคปค้อดซึ่งอยู่ใต้คาบสมุทรยูกาตัน มีกลุ่มประชากรแบ่งเป็น 2 กลุ่มตามเขตภูมิภาค เมื่อใกล้ถึงฤดูร้อน กลุ่มหนึ่งจะอพยพเป็นฝูงใหญ่ไปทางทิศเหนือตามชายฝั่งจากรัฐฟลอริดาเพื่อไปวางไข่ในน้ำตื้นที่ชายฝั่งนิวอิงแลนด์ แล้วก็จะกลับไปอยู่ในน้ำลึกของฟลอริดาในหน้าหนาว ส่วนอีกกลุ่มหนึ่งอพยพเป็นฝูงใหญ่ตามชายฝั่งจากประเทศเม็กซิโกไปวางใข่ในน้ำตื้นในอ่าวเม็กซิโกตามชายฝั่งของรัฐเท็กซัส แล้วก็จะกลับไปอยู่ในน้ำลึกของเม็กซิโกในหน้าหนาว ปลาสองกลุ่มนี้บริหารจัดการต่างกัน แม้จะเหมือนกับทางพันธุกรรม
  • ปลาแมกเคอเรลแอตแลนติก (Scomber scombrus) เป็นปลาชายฝั่งที่พบในแอตแลนติกเหนือเท่านั้น แต่กลุ่มในมหาสมุทรด้านตะวันตกจะเป็นอิสระจากกลุ่มประชากรด้านตะวันออก กลุ่มด้านตะวันออกแบ่งออกเป็น 3 กลุ่ม คือ กลุ่มทะเลเหนือ (North Sea) กลุ่มใต้ (southern) และกลุ่มตะวันตก (western) แต่ละกลุ่มมีรูปแบบอพยพที่ต่างกัน การผสมพันธุ์ระหว่างกลุ่มต่าง ๆ ด้านมหาสมุทรแอตแลนติกตะวันออกจะเกิดในที่หากินทางด้านทิศเหนือ แต่กลุ่มแอตแลนติกตะวันออกและตะวันตกจะไม่ผสมพันธุ์กัน
  • สปีชีส์ชายฝั่งที่สามัญอีกสปีชีส์หนึ่งคือ chub mackerel (Scomber japonicus) ไม่มีอยู่ในมหาสมุทรแอตแลนติกแต่อยู่กระจายไปทั่วในซีกโลกทั้งสองในมหาสมุทรแปซิฟิก มีรูปแบบการอพยพค่อนข้างคล้ายกับปลาแมกเคอเรลแอตแลนติก คือในซีกโลกเหนือ ปลาจะอพยพไปทางทิศเหนือในฤดูร้อนไปยังที่ทำกิน และอพยพไปทางทิศใต้ในฤดูหนาวเพื่อวางไข่ในน้ำที่ตื้นกว่า ในซีกโลกใต้ รูปแบบการอพยพก็จะกลับกัน หลังจากวางไข่ ปลาบางกลุ่มจะอพยพลึกลงไปตามลาดทวีปแล้วอยู่ในฤดูหนาวโดยไม่ค่อยทำอะไร
  • ปลา Chilean jack mackerel (Trachurus murphyi) ซึ่งเป็นปลาแมกเคอเรลที่ตกมากสุด จะพบในมหาสมุทรแปซิฟิกใต้ตั้งแต่ออสเตรเลียตะวันตกจนถึงชายฝั่งของประเทศชิลีและเปรู ส่วนสปีชีส์พี่น้องกัน (sister species) คือ Pacific jack mackerel (Trachurus symmetricus) จะพบในมหาสมุทรแปซิฟิกเหนือ Chilean jack mackerel จะอยู่ตามชายฝั่งบริเวณที่น้ำผุดขึ้น (upwelling) แต่ก็อพยพข้ามมหาสมุทรด้วย จำนวนของมันอาจต่างกันมากขึ้นอยู่กับความเปลี่ยนแปลงของมหาสมุทร โดยสภาพอากาศเอลนีโญจะมีผลเป็นพิเศษ

มีปลา jack mackerel 3 สปีชีส์ที่พบในทะเลชายฝั่งรอบ ๆ นิวซีแลนด์ คือ Greenback horse mackerel, Chilean jack mackerel และ Pacific jack mackerel ซึ่งมักจับด้วยอวนล้อมจับมีสายมาน (purse seine) แต่บริหารเหมือนกับเป็นปลากลุ่มเดียวโดยมีสปีชีส์หลายสปีชีส์

มีปลาแมกเคอเรลบางพันธุ์ที่อพยพขึ้น ๆ ลง ๆ คือ snake mackerel จะอยู่ในน้ำลึกช่วงกลางวันและขึ้นมาบนผิวน้ำหากินเวลากลางคืน เป็นการอพยพที่เรียกว่า diel vertical migration ปลาที่ยังไม่โตเต็มที่ก็ทำอย่างเดียวกันแต่ในทิศทางตรงกันข้าม คือ อยู่ใกล้ผิวน้ำช่วงกลางวันแล้วไปอยู่ในน้ำลึกช่วงกลางคืน สปีชีส์นี้กินหมึก กุ้งกั้งปูที่ผิวน้ำ ปลาตะเกียง ปลานกกระจอก ปลาวงศ์ Scomberesocidae และปลาแมกเคอเรลอื่น ๆ ในนัยตรงกันข้าม ปลาทูน่าและปลากระโทงก็จะล่ามันกิน

ปลาแมกเคอเรลสืบพันธุ์โดยปล่อยเซลล์สืบพันธุ์ลงในน้ำ ซึ่งต้องทำใกล้ผิวน้ำเพราะไข่ของตัวเมียลอยน้ำ ตัวเมียจะวางไข่ระหว่าง 300,000-1,500,000 ฟอง ไข่และตัวอ่อนของปลาจะลอยตัวเป็นอิสระในน้ำทะเล ตัวอ่อนและปลายังไม่โตจะกินแพลงก์ตอนสัตว์ (zooplankton) เมื่อโตขึ้นจะมีฟันคม จึงสามารถล่าสัตว์พวกกุ้งกั้งปู เช่น โคพีพอด (copepod), ปลาเหยื่อ (forage fish), กุ้ง และหมึก แต่มันก็จะเป็นเหยื่อของสัตว์ผิวน้ำรวมทั้งปลาทูน่า, billfish (ปลาในอันดับ Istiophoriformes), สิงโตทะเล, ฉลาม และนกวงศ์กระทุง

ที่ชายฝั่งประเทศมาดากัสการ์ ปลาฉลามสปินเนอร์ (spinner shark, spinner shark) จะเฝ้าตามฝูงปลาแมกเคอเรลที่กำลังอพยพ วาฬบรูด้าก็จะกินปลาด้วยถ้าหาเจอ โดยมีวิธีกินหลายอย่างรวมทั้งเฉี่ยวกินที่ผิวน้ำ (skimming the surface) อ้าปากพุ่งไปข้างหน้า (lunging) และร่วมกันสร้างกำแพงฟองอากาศล้อมปลาแล้วกิน (bubble net)

ปลา Chub mackerel สปีชีส์ Scomber japonicus เป็นปลาแมกเคอเรลวงศ์ปลาอินทรีที่จับมากที่สุด เป็นปลาแมกเคอเรลวงศ์ปลาอินทรีครึ่งหนึ่งที่จับได้ สับสนได้ง่ายกับปลาแมกเคอเรลแอตแลนติก Chub mackerel อพยพเป็นระยะทางยาวไกลในมหาสมุทรและข้ามทะเลเมดิเตอร์เรเนียน สามารถจับได้ด้วยอวนลอย (drift net) และอวนลาก (trawl) ที่เหมาะสม แต่ปกติจะจับด้วยอ้วนล้อม (surround net) มากที่สุดช่วงกลางคืนโดยล่อไฟ

ปลาแมกเคอเรลวงศ์ปลาอินทรีที่จับได้ที่เหลือจะเป็นปลาแมกเคอเรลแอตแลนติกกับปลาแมกเคอเรลวงศ์ปลาอินทรีพันธุ์อื่น ๆ โดยสองกลุ่มนี้จับได้เท่ากัน ในกลุ่มปลาวงศ์ปลาอินทรี ปลา 75% ที่จับได้มาจากปลาสองพันธุ์ Chilean jack mackerel เป็นปลาแมกเคอเรลไม่ใช่ปลาอินทรีที่จับได้มากที่สุดโดยจับมากเท่า ๆ กับ chub mackerel สปีชีส์นี้จับมากเกิน และประชากรปลาเสี่ยงว่าจะหมดไปอย่างรวดเร็ว

ปลาแมกเคอเรลที่เล็กกว่ามีพฤติกรรมคล้ายปลาเฮร์ริง ดังนั้น ก็จะจับโดยวิธีเดียวกัน ปลาเช่นนี้ ซึ่งอยู่เป็นฝูงใกล้ผิวน้ำ สามารถจับได้ด้วยอวนล้อมมีสายมาน (purse seining) เรือลำมหึมาอาจใช้เครื่องบินหาฝูงปลา แล้วเรือก็จะเข้าไปหาปลาโดยใช้ระบบโซนาร์ที่ทันสมัยเพื่อตรวจดูรูปร่างของฝูงปลา แล้วก็จะล้อมใช้เรือสำรองที่วิ่งได้เร็วซึ่งปล่อยอวนล้อมมีสายมานเมื่อวิ่งล้อมฝูงปลา

เรือลากสายเบ็ด (troller) ที่เหมาะสมก็สามารถจับปลาแมกเคอเรลอย่างมีประสิทธิภาพเช่นกันเมื่อปลาว่ายอยู่ตามผิวน้ำ โดยสายเบ็ดอาจลากด้วยเครื่องม้วนไฟฟ้าหรือไฮดรอลิก อุปกรณ์เรียกปลา (Fish aggregating device) ก็อาจใช้เรียกปลาแมกเคอเรลเช่นกัน

เขตตะวันออกเฉียงใต้ของสหรัฐรวมอ่าวเม็กซิโก ทะเลแคริบเบียน และมหาสมุทรแอตแลนติกด้านตะวันออกเฉียงใต้ เป็นเขตที่เคยจับปลา king mackerel และ atlantic Spanish mackerel มากเกินในช่วงคริสต์ทศวรรษ 1980 จนมีกฎหมายจำกัดการจับปลารวมทั้งขนาดปลา บริเวณจับปลา และจำนวนปลาทั้งสำหรับผู้จับปลาเป็นพาณิชย์และเป็นกีฬา อวนติดตา (Gillnet) ก็ห้ามไม่ให้ใช้ในน่านน้ำรัฐฟลอริดา จนกระทั่งประชากรปลาได้กลับคืนมาในปี 2001

ปลาแมกเคอเรลเป็นอาหารสำคัญที่บริโภคทั่วโลก เพราะมีไขมันสูง จึงเป็นแหล่งกรดไขมันโอเมกา-3 ที่ดี เนื้อปลาเสียเร็วโดยเฉพาะในเขตร้อน ซึ่งอาจทำให้อาหารเป็นพิษ (scombroid food poisoning) ดังนั้น จึงควรรับประทานในวันที่จับได้ ยกเว้นถ้าถนอมไว้อย่างถูกต้อง

การถนอมปลาไม่ใช่เรื่องง่าย ก่อนการอัดปลากระป๋องและการแช่เย็นในคริสต์ทศวรรษที่ 19 การหมักเกลือและการรมควันเป็นวิธีหลักที่ใช้ ในประวัติประเทศอังกฤษ ปลาจะไม่ผ่านการถนอมอาหาร แต่จะกินสด ๆ เท่านั้น แต่ปลาเสียก็เป็นเรื่องสามัญ ทำให้มีนักเขียนถึงกับกล่าวไว้ว่า "มีการพูดถึงปลาแมกเคอเรลเหม็นในวรรณกรรมอังกฤษมากกว่าปลาอื่น ๆ ทั้งหมด" ในประเทศฝรั่งเศส ปลามักจะหมักเกลือ จึงสามารถขายได้ทั่วประเทศ
