ปลาหิมะ (อังกฤษ : sablefish, sable, black cod, butterfish, bluefish, candlefish, coal cod ; ญี่ปุ่น : ギンダラ ; /กิน-ดะ-ระ/; ชื่อวิทยาศาสตร์ : Anoplopoma fimbria ) เป็นชื่อทางการค้าที่เรียกปลาชนิดหนึ่ง ที่อยู่ในวงศ์ปลาหิมะ (Anoplopomatidae) จัดเป็นปลาเพียงชนิดเดียวที่อยู่ในสกุล Anoplopoma
ปลาหิมะ เป็นปลาที่อาศัยอยู่ในน้ำลึกประมาณ 300–3,500 เมตร บริเวณมหาสมุทรแปซิฟิกเหนือจนถึงทะเลญี่ปุ่น ในแถบที่พื้นทะเลเป็นโคลน เป็นปลาที่เจริญเติบโตช้า วางไข่ได้เมื่ออายุ 10 ปี อายุยืน ความยาวสูงสุดที่พบประมาณ 2.2 เมตร น้ำหนัก 120 กิโลกรัม กินปลาหมึก, กุ้ง, ปู และปลาเป็นอาหาร
ปลาหิมะ เป็นปลาเนื้อสีขาว เนื้อนิ่ม รสชาติกลมกล่อม เนื้อมีลักษณะคล้ายเนื้อปลากะพงขาว แต่เนื้อปลาหิมะจะมีไขมันผสมอยู่สูงกว่า เนื้อของมันสามารถใช้ประกอบอาหารได้หลายประเภทเช่น ต้ม, ย่าง, อบ, ทอด รวมถึง รับประทานสดเป็นซาชิมิ โดยเป็นเนื้อปลาที่มีราคาแพงในญี่ปุ่น
