ตับอ่อน (อังกฤษ : pancreas ) เป็นอวัยวะซึ่งเป็นต่อมในระบบย่อยอาหาร และระบบต่อมไร้ท่อ ในสัตว์มีกระดูกสันหลัง ในมนุษย์ ตับอ่อนอยู่ในช่องท้อง หลังกระเพาะอาหาร เป็นต่อมไร้ท่อซึ่งผลิตฮอร์โมน สำคัญหลายชนิด รวมถึงอินซูลิน กลูคากอน โซมาโตสเตติน และแพนคริเอติกพอลิเพพไทด์ซึ่งไหลเวียนอยู่ในเลือด ตับอ่อนเป็นอวัยวะย่อยอาหาร โดยหลั่งน้ำย่อยตับอ่อนซึเอนไซม์ย่อยอาหารที่ช่วยการย่อยและดูดซึมสารอาหารในลำไส้เล็ก เอนไซม์ เหล่านี้ช่วยสลายคาร์โบไฮเดรต โปรตีน และลิพิด ในไคม์ (chyme) และตับอ่อนมักหลั่งเอนไซม์ คือ trypsinogen chymotrypsinogen procarboxypeptidase ปยอ.ไม่มีขนาด
