ฟัวกราส์ (ฝรั่งเศส: foie gras, ออกเสียง: [fwa ɡʁɑ]; แปลตรงตัว: "ตับอ้วน") เป็นผลิตภัณฑ์อาหารที่ทำมาจากตับของเป็ดหรือห่าน รายงานจากกฎหมายฝรั่งเศส ฟัวกราถือเป็นตับของเป็ดหรือห่านที่ถูกทำให้อ้วนด้วยวิธีการให้อาหารทางสายยาง ในประเทศสเปน และประเทศอื่น จะใช้วิธีการให้อาหารตามธรรมชาติ ฝูงเป็ดถูกบังคับให้กินอาหารสองครั้งต่อวันเป็นเวลา 12.5 วัน ส่วนห่านอยู่ที่สามครั้งต่อวันเป็นเวลาประมาณ 17 วัน ฝูงเป็ดถูกฆ่าในวันที่ 100 และห่านถูกฆ่าในวันที่ 112

เทคนิคการให้อาหารผ่านหลอดสามารถสืบได้ถึง 2500 ปีก่อนคริสตกาล เมื่อชาวอียิปต์โบราณเริ่มเก็บนกไว้ทำอาหารและทำให้มันอ้วนโดยการบังคับกิน ปัจจุบัน ฝรั่งเศสเป็นประเทศที่ผลิตและบริโภคฟัวกราส์มากที่สุด ถึงแม้ว่าจะมีการผลิตและบริโภคทั่วโลกก็ตาม โดยเฉพาะชาติยุโรป สหรัฐ และจีน

ฟัวกราส์ เป็นอาหารที่มีไขมันมาก และยังมีเส้นใยมากอีกด้วย แต่เดิมแหล่งผลิตฟัวกราที่ดีที่สุด คือ เมืองตูลูซ ทางภาคใต้ของฝรั่งเศส แต่ปัจจุบันนี้สามารถหารับประทานได้เกือบทุกที่ องค์การสิทธิสัตว์และสวัสดิการสัตว์ถือว่า ขั้นตอนการผลิตฟัวกราส์นั้นโหดร้าย เนื่องจากเป็นการบังคับป้อนอาหารให้ห่านหรือเป็ดด้วยข้าวโพด เพื่อให้มีตับใหญ่กว่าปรกติ นอกจากนี้ การผลิตฟัวกราส์นั้นผิดกฎหมายในหลายพื้นที่ เพราะถือเป็นการทรมานสัตว์ เป็นต้นว่า ใน
