เมแทบอไลต์ หรือ สารในกระบวนการสร้างและสลาย (อังกฤษ: metabolite) เป็นสารมัธยันตร์ (intermediate) คือไม่ใช่สารที่ได้ในที่สุดของกระบวนการเมแทบอลิซึม คำปกติจะจำกัดใช้กับสารที่โมเลกุลเล็ก (มวลโมเลกุล < 900 daltons) เมแทบอไลต์มีหน้าที่ต่าง ๆ รวมทั้งเป็นพลังงาน โครงสร้าง สัญญาณ (signaling) มีผลกระตุ้นหรือยับยั้งเอนไซม์ เป็นสารเร่งปฏิกิริยาเอง (โดยเป็นโคแฟกเตอร์ของเอนไซม์) ป้องกันสิ่งมีชีวิต และมีปฏิสัมพันธ์กับสิ่งมีชีวิตอื่น ๆ (เช่น เป็นสารสี สารออกกลิ่น หรือฟีโรโมน) เมแทบอไลต์ปฐมภูมิ (อังกฤษ: primary metabolite) มีส่วนเกี่ยวข้องกับการเติบโต การดำรงสภาพ และการรอดชีวิตของสิ่งมีชีวิต ตัวอย่างเช่น เอทิลีน ซึ่งสามารถผลิตในระดับอุตสาหกรรมด้วยจุลชีพ ส่วน เมแทบอไลต์ทุติยภูมิ (อังกฤษ: secondary metabolite) ไม่เกี่ยวกับกระบวนการเช่นนั้น แต่อาจมีหน้าที่ทางนิเวศ ตัวอย่างคือ ยาปฏิชีวนะและสารสี เช่น เรซินและ terpene เป็นต้น ยาปฏิชีวนะบางอย่างมีเมแทบอไลต์ปฐมภูมิเป็นสารตั้งต้น เช่น ยา actinomycin สร้างจากเมแทบอไลต์ปฐมภูมิคือ tryptophan น้ำตาลบางอย่างเป็นเมแทบอไลต์ เช่น ฟรักโทสหรือกลูโคส ทั้งสองอยู่ในวิถีเมแทบอลิซึมของกระบวนการต่าง ๆ ในเซลล์

สารเคมีมีโมเลกุลเล็กทั้งหมดในสิ่งมีชีวิตมีปฏิกิริยาทางเมทาบอลิซึมมากมาย โดยผลผลิตที่ได้จากปฏิกิริยาที่เร่งด้วยเอนไซม์หนึ่ง ๆ จะใช้เป็นสารตั้งต้นของปฏิกิริยาอีกอย่างหนึ่ง เมทาบอไลต์จากสารประกอบเคมี ไม่ว่าที่มีตามธรรมชาติหรือที่ทำเพื่อเป็นยา เกิดจากกระบวนการเคมีชีวภาพที่สลายและกำจัดสารประกอบ อัตราการแตกสารประกอบเป็นตัวกำหนดระยะและความแรงของปฏิกิริยา การกำหนดเมแทบอไลต์ของสารประกอบที่ใช้เป็นยา คือเมแทบอลิซึมของยา เป็นส่วนสำคัญในการค้นพบยา เพราะทำให้สามารถเข้าใจผลข้างเคียงที่ไม่ต้องการ
